Salsa Cheese Meatloaf

Preheat oven to 375F

Ingredients 
  • 2lbs - Gound Beef
  • 1 - Egg lightly beaten
  • 1/2 - 1 cup - Salsa
  • 1/2 cup - Red Pepper Chopped
  • 1/2 cup - Quick Cook Oats
  • 1/4 cup - Chopped Onion
  • 1/2 - 1 cup - shredded cheese (we use whatever is in the fridge, Gouda, Cheddar etc.)
  • 1 tsp - Salt
  • 1 tsp - Parsley
  • 1/2 tsp - Garlic Powder or 1 clove minced Garlic
  • 1/4 tsp - pepper
  • 1/3 cup - Italian Bread Crumbs (they have parmesan cheese mixed in)
Directions
  • Except for the cheese, mix all the ingredients together with your hands
  • Place 1/2 mixture in a loaf pan, make a "well" and put cheese in, then top with the remaining mixture on top
Topping
  • 1/3 cup - Ketchup
  • 1tbsp - Mustard
  • Mix together and spread over the top of the meatloaf
Bake 1hr

Note: this recipe works great doubled so you can freeze 1 for later!
